!. Organic chicken soup ( my Jewish friend says it's the best gentile chicken soup he has ever
eaten.)
1 organic chicken
2 tbs. of chopped fresh parsley
1 box container of Swanson chicken broth
2 lg. organic carrots
2 lg. stalks of organic celery
1/4 cup of diced organic garlic
1 tbs. of sea salt (or to your taste)
1/2 tbs. of ground black pepper (or to your taste)
1 bay leaf
1 cup wild rice
1 lg. organic yellow onion cut in fourths
Clean and wash chicken and place in large pot. Add just enough water to cover the chicken.
Add the box of Swanson chicken broth, the sea salt, pepper, bay leaf and garlic.Cover pot
and cook slowly until chicken is almost falling off the bone. (Probably 1 1/2 - 2 hrs.) While
chicken is cooking, chop the carrots, onion, and celery. When the chicken is cooked remove
it from the pot and let it cool on a plate. Remove the bay leaf. To the broth in the pot add the carrots, celery, onion, parsley, and cup of wild rice. Cover and cook until the rice is done and the vegetables are tender (but not mushy). As soon as the chicken is cooked remove it from the bone, and dice in lg. chunks. Add chicken to broth, vegetables, and rice mixture. Serve warm. |
